Mashed Sweet Potatoes
Mashed potatoes but make them…SWEET! Enjoy in-season, Georgia-grown sweet potatoes from August through February. Happy cooking!
Ingredients:
- 4 lbs. sweet potatoes, about 4 large potatoes
- 6 Tbsp. butter
- 2 cups half & half, or milk
- 1 1/2 tsp. salt
- 1/4 cup maple syrup
- 1/2 tsp. black pepper
Directions:
Peel potatoes and cut them into 1 inch chunks. Melt butter in a large pot over medium heat. Add sweet potatoes and saute until just softened, about 5 minutes.
Pour in half & half (or milk) and 1 tsp. salt. Stir to combine and bring to a boil. Reduce heat and let simmer until potatoes are tender, about 20 to 25 minutes.
Remove from heat and use a potato masher to mash sweet potatoes in the pot until mostly smooth. Add maple syrup, 1/2 tsp. salt, and pepper. Whisk potatoes until whipped, about 2 minutes. Season with more salt as desired.
