Roasted Turnip Hummus
A light and bright mid-day snack featuring Georgia Grown turnips! This would make a great party appetizer as well. Try this Roasted Turnip Hummus recipe today!
Ingredients:
- 2-3 cups Georgia Grown Turnips, diced
- 1 1/4 Tbsp. olive oil
- 1/2 tsp. sea salt
- Black pepper
- 1 15 1/2 oz can chickpeas, rinsed and drained
- 1/4 cup tahini
- 2 cloves garlic, minced
- 1/2 lemon, juiced
- 1.2 tsp. cumin
Directions:
Preheat oven to 450 degrees. Line baking sheet with parchment paper, toss diced turnips with 1 Tbsp. olive oil, salt and pepper. Spread onto baking sheet and bake for 20-30 minutes.
In a food processor, combine roasted turnips, chickpeas, tahini, remaining olive oil, garlic, lemon juice, sea salt, and cumin. Blend until smooth adding more olive oil or water as needed.
Serve with fresh vegetables, apples, or pita chips!
