Cantaloupe & Cucumber Salad
This light and refreshing Cantaloupe & Cucumber Salad will be on repeat all season long!
Ingredients
- 1 Georgia grown cantaloupe, halved and deseeded
- 1 large cucumber, halved
- 2 oz crumbled feta cheese
- 2 Tbsp olive oil
- Juice of 1 lemon
- Pinch of salt
- 10 basil leaves, chopped
Directions
Using a knife or melon baller, cut as many pieces of cantaloupe as possible.
Cut cucumber into half moons and add to melons.
Combine olive oil, lemon juice and salt in a small bowl.
Add vinaigrette to the fruit and toss to combine. Top with feta crumbles and basil.
