Ingredients
- 8 fresh mushrooms, halved
- 1 zucchini, cut into 1/4′
- 1 yellow squash, cut into 1/4′
- 1 sweet red pepper
- 1 onion, sliced
- 2 Tbsp. olive oil
- 2 cups mozzarella cheese, shredded
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 prebaked pizza crust
- 1/2 tsp. basil
- 1 8 oz. can pizza sauce
- 2 tomatoes, chopped
- 3 Tbsp. minced garlic
Directions
Brush vegetables with oil, and sprinkle with salt and pepper. Grill covered over medium heat until tender. 4-5 minutes per side for onion and pepper, 3-4 minutes for squash and zucchini.
Separate onion into rings and slice pepper into strips. Spread pizza crust with garlic and tomato sauce. Sprinkle with cheese. Add grilled vegetables and the remaining cheese.
Grill pizza covered over medium heat until bottom is golden brown and cheese is melted. 5-7 minutes. Top with basil for serving.
