Fall Harvest Cobb Salad
Take the time to treat yourself to a hearty lunch with this Fall Harvest Cobb Salad. Or, serve it alongside your favorite cozy soup for a complete dinner!
Ingredients
- 6 cups lettuce or mixed greens
- 1 large chicken breast, diced
- 2 hard boiled eggs
- 5-6 slices cooked bacon
- 1 1/2 cups butternut squash, diced
- 1 honeycrisp apple, sliced thin
- 1/3 cup dried cranberries
- 1/3 cup feta cheese crumbles
- 1 Tbsp. olive oil
Directions
Preheat oven to 400. In a bowl, toss butternut squash with olive oil and season with salt and pepper. Arrange squash on a baking sheet and roast for 25-35 minutes.
Meanwhile, place lettuce and greens in your bowl. Top with chicken, egg, bacon, and dried cranberries. Add cooled butternut squash. Drizzle with dressing of choice and sprinkle with feta cheese.
