Freeze pumpkin for cooking or baking no matter the time of year!
Freeze for Cooking:
Chop pumpkin in 2-3 inch cubes.
Blanche pumpkin in a pot of boiling water for 3-4 minutes. Transfer to an ice bath for 2 minutes.
Freeze in a single layer on a baking sheet. Once fully frozen, transfer to freezer bags for storage.
Freeze Puree for Baking:
Cube pumpkin and puree in a blender or food processor until very smooth.
Freeze in containers, bags or canning jars for pies or breads.
