Homemade Pumpkin Pancakes with Homemade Cinnamon Butter

Pumpkin Pancakes

“I’m makin’ pumpkin pancakes, and it comes with homemade cinnamon butter.” Name that show! Make your own Luke’s iconic pumpkin pancakes.

Ingredients

  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. ground ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cloves
  • 1/2 tsp. salt
  • 1 1/2 cups buttermilk
  • 3/4 cup pumpkin puree
  • 2 eggs
  • 3 Tbsp. butter
  • 1 Tbsp. vanilla extract

Cinnamon Butter

  • 8 Tbsp. (1/2 cup) butter
  • 1/4 cup powdered sugar
  • 2 Tbsp. honey
  • 1 tsp. cinnamon

Directions

In a large bowl, whisk together all dry ingredients and spices. In a smaller bowl combine pumpkin, buttermilk, eggs, and vanilla.

Gently combine wet ingredients into dry mixture. DO NOT overmix. Let batter sit 5-10 minutes while you make cinnamon butter.

Add cinnamon butter ingredients in a small bowl and beat with an electric mixer until smooth and fluffy, 1-2 minutes.

Heat a large skillet or griddle over medium heat. Grease with butter. Pour about 1/3 cup of pancake batter onto your skillet. Cook 2-3 minutes or until bubbles form on the surface. Flip and cook 1-2 more minutes until golden.

Serve with cinnamon butter and top with warm maple syrup!
