Italian Sausage & Kale Soup

The one good thing about the weather getting colder is a warm and cozy soup. This Italian Sausage & Kale soup is full of all the good things!

Ingredients

  • 1 lb hot Italian sausage
  • 6 cups chopped fresh kale
  • 2 cans great Northern beans, rinsed and drained
  • 1 can crushed tomatoes
  • 4 large carrots, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 5 cups chicken stock
  • grated Parmesan cheese

Directions

In a large skillet, cook sausage over medium heat until cooked through and drain and transfer to your slow cooker. Add kale, beans, tomatoes, carrots, onion, garlic, seasonings, and stock.

Cook covered on low for 8 hours. Top with cheese.
