Strawberry & Goat Cheese Crostini
Try this bright and beautiful appetizer for your next spring get-together! Perfect for birthday luncheons, bridal or baby showers, Easter, Mother’s Day, etc.
Ingredients
- 1 cup strawberries, diced
- 1 1/2 tsp. sugar
- 1 loaf French bread, 1/2 inch thick slices
- 1 Tbsp. olive oil
- 4 oz. goat cheese
- Fresh mint leaves
- Balsamic glaze drizzle
Directions
Preheat oven to 425. Combine strawberries and sugar in a medium bowl and set aside.
Lay bread slices on a baking sheet and brush with olive oil. Bake until toasted, 5 to 7 minutes. Allow bread to cool on pan, about 5 minutes.
Spread goat cheese on the crostini and top with strawberries. Sprinkle with mint and drizzle with balsamic for serving.
