Kale Caesar Salad
Add steak, chicken, or salmon for a full meal in no time, or enjoy as is for a perfect lunch. Pair it with your favorite pasta dish for a delicious dinner!
Ingredients
- 6 cups kale
- 2 cups cubed Italian bread
- 2 Tbsp. olive oil
- 1 tsp. garlic powder
- 1/2 tsp. kosher salt
- 1/2 cup parmesan cheese, shaved
Caesar Dressing:
- 1 cup mayonnaise
- 1/2 cup parmesan cheese
- 1 clove garlic
- 1 Tbsp. Dijon mustard
- 3 Tbsp. lemon juice
- 1 tsp. Worcestershire sauce
- 1 tsp. black pepper
- 2 Tbsp. olive oil
Directions
Preheat oven to 400. Coarsely chop your kale leaves and drizzle with 1 tablespoon lemon juice.
Toss bread cubes in olive oil, garlic powder, and salt on a baking sheet. Bake for 12 minutes until golden brown, tossing halfway through.
Add mayonnaise, parmesan, garlic clove, dijon mustard, remaining lemon juice, Worcestershire sauce, and pepper to a food processor. Blend until completely smooth slowly drizzling in olive oil as it is blending.
Add dressing to the bowl with kale. Toss dressed salad with parmesan and add homemade croutons.
