Creamy Cucumber Salad ft. Vidalia Onions
Ingredients
- 2 large cucumbers, sliced thin
- 1/2 cup finely sliced Vidalia onion
- 1/4 cup sour cream
- 2 Tbsp. mayonnaise
- 1 Tbsp. white wine vinegar
- 1/2 tsp. sugar
- 3 Tbsp. fresh dill, minced
- salt and pepper to taste
Directions
Salt cucumbers and onions well with 1 teaspoon and empty into a colander. Drain for 30 minutes. Pat dry with a paper towel.
Meanwhile, mix sour cream, mayonnaise, vinegar, sugar, 2 tablespoons of dill, salt and pepper in a small bowl.
Pour creamy mixture over vegetables and toss to evenly coat. Serve chilled and garnish with fresh dill.
