Ratatouille
A glorious combination of yellow squash AND zucchini! This Rattatoullie recipe is a summertime must make!!!
Ingredients
- 2-3 Georgia yellow squash
- 2-3 Georgia zucchini
- 1 10 oz. can diced tomatoes
- 1 Vidalia onion
- Oregano
- Basil
- Onion Powder
- Salt & pepper to taste
- Water
- Shredded parmesan cheese
Directions
Layer squash, zucchini, and onion in a round microwave-safe baking dish. Season with salt and pepper, add water to the bottom of the dish and microwave 4-6 minutes until vegetables begin to soften.
Add diced tomatoes and seasonings to taste. Microwave about 3-4 more minutes until everything is heated through.
Top with parmesan cheese and microwave 1 more minutes to melt.
