- Choose small, fresh pods – the smaller the pod the less slime and seeds!
- Use high heat – the longer okra cooks, the slimier it gets.
- Dry them well – wet pods will start to steam, creating more slime.
- Cook in small batches – don’t overcrowd your skillet/baking sheet.
- Add Acid – lemon juice, chopped tomatoes, or vinegar will add more flavor and lessen the amount of slime.
- Cut in larger pieces – lots of small cuts release more slime, the bigger the pieces, the less slime you’ll have.
