Pickled Okra
Welcome to the South, where anything can be a pickle, and Pickled okra might take the cake! P.S. it’s easier to make than you think!
Ingredients
- 1 lb. whole okra
- 1 Vidalia onion, thinly sliced
- 1 clove garlic
- 1 dried chile
- 1 tsp. black peppercorns
- 1 tsp. coriander seeds
- 1/2 tsp. mustard seeds
- 1/2 tsp. fennel seeds
- 1/2 tsp. whole allspice
- 2 whole cloves
- 2 cups apple cider vinegar
- 2 cups water
- 3 to 4 Tbsp. salt
- 2 to 3 Tbsp. sugar
Directions
Fill sterilized mason jars with okra, onion, garlic, dried chile, black peppercorns, coriander seed, mustard seed, fennel seed, allspice, and cloves.
In a large pot, heat vinegar, water, salt, and sugar, and bring it to a boil.
Ladle hot brine over okra and seal jars. Allow the jar to sit for at least 1 week for flavors to meld. Refrigerate after opening.
