Tomato Pie

What’s not to love about juicy Georgia tomatoes and creamy, melty cheese?! Indulge in this delicious Southern Tomato Pie and welcome to comfort food heaven!

Ingredients

  • 3 lbs. large tomatoes
  • 1 tsp. salt
  • 2 large shallots, chopped
  • 2 tsp. garlic, minced
  • 1 1/2 cups sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1/2 fresh basil, chopped
  • 1/4 cup chives, sliced
  • 1 Tbsp. Dijon mustard
  • 1 egg
  •  Fresh basil
  • Pie crust

Directions

Preheat oven to 400. Place pie crust in a round pie baking dish. Slice tomatoes and set on a paper towel to set aside.

Prepare filling by combining cheese, mayonnaise, basil, chives, dijon, and egg. Sprinkle with pepper to taste and 1/4 teaspoon of salt.

Gently spread part of the cheese mixture into the bottom of the pie crust—layer with half of your tomato slices in an overlapping pattern. Repeat layers until all filling and all tomatoes are used.

Bake until the filling is set, about 40 to 45 minutes. Transfer to a wire rack and let sit before serving. Top with fresh basil and enjoy!
