Apple Cinnamon Muffins
Ingredients
- 2 cups all-purpose flour
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 stick butter
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp. vanilla extract
- 1 cup milk
- 1 large apple
For Crumble Topping:
- 1 stick butter, melted
- 1/4 cup brown sugar
- 2 Tbsp. sugar
- 1 1/2 tsp. cinnamon
- pinch of salt
- 1 cup + 2 Tbsp. all-purpose flour
Directions
Preheat oven to 350. Line muffin tin with paper liners. Whisk together flour, cinnamon, baking powder, baking soda, and salt in a medium bowl.
In a separate bowl, using a mixer, beat butter and sugars together until creamy. Add egg and vanilla and beat to combine. Add dry ingredients and beat on low speed until just combined. Fold in apples.
For crumble topping: Combine melted butter, sugars, cinnamon, and salt in a bowl. Mix in flour until large crumbs form.
Fill muffin liners about 3/4 full with batter and top with crumble topping. Bake 20-22 minutes.
