Cabbage Roll Soup

The temperatures might warm up in Georgia, but we all know it won’t last long! Save this Cabbage Roll Soup recipe for the cold Georgia winter days that are sure to come back soon!

Ingredients

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 lbs. ground beef
  • 3/4 cup rice, uncooked
  • 1 head cabbage, chopped
  • 28 oz canned diced tomatoes
  • 2 Tbsp. tomato paste
  • 4 cups beef broth
  • 1 1/2 cups vegetable juice
  • 1 tsp. paprika
  • 1 tsp. Worcestershire sauce
  • 1 bay leaf
  • salt & pepper to taste

Directions

In a large pot, brown the onion, garlic, and ground beef. Drain excess fat.

Stir in chopped cabbage and let cook until slightly softened about 3 minutes. Add in diced tomatoes, tomato paste, beef broth, vegetable juice, uncooked rice, paprika, thyme, Worcestershire sauce, bay leaf, salt and pepper. Stir well to combine.

Bring the mixture to a boil, reduce heat to medium-low, cover the pot, and let simmer until rice is fully cooked, about 25 to 30 minutes. Remove bay leaf and serve!
