Blueberry Muffin Bread

Blueberry muffins meet fluffy, buttery bread! Try this Blueberry Muffin Bread for breakfast this weekend!

Ingredients

  • 1 stick butter
  • ¾ cup brown sugar
  • 1 cup Greek yogurt
  • 3 eggs
  • 2 tsp. vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 ½ cups fresh blueberries
  • 1 Tbsp. all-purpose flour
  • 1 Tbsp sugar
  • 2 Tbsp. blueberry jam

Cinnamon Crunch

  • ½ cup brown sugar
  • 1 Tbsp. all-purpose flour
  • 1 Tbsp. cinnamon
  • 2 Tbsp. butter

Directions

Preheat oven to 350. Line your loaf pan with parchment paper.

In a bowl, whisk together melted butter, brown sugar, yogurt, eggs, and vanilla. Add the flour, baking powder, and salt. Mix until fully combined. Toss blueberries with 1 tablespoon flour. Mix the berries into the batter.

Pour batter into your prepared pan. Sprinkle with sugar, then swirl in blueberry jam, leaving streaks of jam throughout the batter.

To make the crunch, mix butter, brown sugar, flour, and cinnamon. Arrange the clumps over the batter. Bake for 55-60 minutes until the center is set.
