Sloppy Joe Sweet Potatoes
Sweet potato toppings go beyond butter and cinnamon! Turn a potato into a whole meal with this sloppy joe recipe.
Ingredients
- 2 large sweet potatoes
- 1 lb. ground beef
- Salt & pepper to taste
- 1 onion, diced
- 1 green bell pepper
- 2 tsp. paprika
- 5 cloves garlic, minced
- ¾ cup ketchup
- 2 Tbsp. yellow mustard
- 1 Tbsp. Worcestershire sauce
- ½ cup shredded cheddar
Directions
Preheat oven to 400. Line a sheet pan with foil. Coat sweet potatoes in olive oil and salt and pepper. Bake for 40 to 50 minutes.
While sweet potatoes are cooking, prepare sloppy joe mix. Cook beef until fully browned. Drain grease adn add onion, bell pepper, paprika, salt and pepper. Add garlic and stir until fragrant. Add ketchup. mustard, and Worcestershire sauce. Stir, reduce heat to low and let simmer for 10 to 15 minutes.
Turn off heat and stir in shredded cheese. Assemble potatoes. Spoon sloppy joe mixture over top of open potato and add toppings!
