Apple Coffee Cake

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  •  1 tsp. vanilla extract
  • 1 cup sour cream
  • 2 apples, peeled and chopped

Streusel Topping:

  • 1/2 Tbsp. butter, melted
  • 1 1/2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1 tsp. cinnamon
  • Pinch of salt
  • Powdered sugar topping optional

Directions

Preheat oven to 350. Coat a 9×13 baking dish with cooking spray. In a bowl, whisk flour, cinnamon, salt, baking powder, and baking soda.

Using a mixer, beat butter and sugars together until creamy. Add eggs and vanilla and beat until combined. Add dry ingredients and mix until combined. Add sour cream, combine, and then fold in apples with a spatula.

In a separate bowl, combine melted butter, flour, sugar, cinnamon, and a pinch of salt. Pour batter into baking dish and sprinkle streusel crumbs over top.

Bake 50 to 60 minutes until golden brown. Top with powdered sugar if desired.
