Breakfast Casserole

A great meal prep breakfast option ft. Georgia bell peppers. This Breakfast Casserole would also be great if you’re hosting family or friends!

Ingredients

  • 2 lbs. Italian sausage
  • 12 eggs
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 tsp. salt
  • 1/2 tsp. ground pepper
  • 4 green onions
  • 1-2 green bell peppers, diced
  • 1-2 red bell peppers, diced
  • 2 cups shredded cheddar cheese

Directions

Preheat oven to 350. Spray 9×13 pan with cooking spray.

In a large bowl, combine eggs, sour cream, milk, cheese, salt and pepper. Mix until just combined.

Heat a skillet over medium heat. Add sausage and cook until browned. Drain the grease and add to the bowl with egg mixture. Add bell peppers and onions to the sa,e skillet and saute for 2-3 minutes. Add to bowl and stir everything to combine.

Pour mixture into your greased baking dish and bake for 30-35 minutes until the edges are set and the center is just barely jiggly.

Ways to Enjoy:

  • Make ahead and store uncooked in the refrigerator until the next day
  • Store leftover cooked casserole in the fridge for 3-4 days
  • Freeze in squares and enjoy a serving at a time – reheats great in the microwave.
