Broccoli Cheddar Soup

Comfort is the taste and smell of this cozy, creamy Broccoli Cheddar Soup.

Ingredients

  • 12 oz. fresh broccoli, chopped
  • 1 small onion, chopped
  • 1 cup shredded carrots
  • 3 Tbsp. butter
  • 1/4 tsp. cayenne
  • 1 Tbsp. dijon mustard
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 Tbsp. garlic, minced
  • 1/4 cup corn starch
  • 4 cups chicken stock
  • 1 cup half & half
  • 4 cups shredded cheddar

Directions

Add broccoli, onion, carrots, garlic, butter, paprika, cayenne, salt, and pepper to your crockpot.

In a separate bowl, combine chicken stock, dijon mustard, and cornstarch. Mix well. Pour mixture into crockpot and give everything a good mix. Place lid on crockpot and cook on high for 3 1/2 hours.

Add half & half and shredded cheddar cheese and mix.

Top with more cheese and serve with crusty bread!

Bread Bowl: Cut the center out of artisan round loaf bread and spoon soup into the bowl created in the bread. Serve!
