Caesar Brussels Sprouts
Crispy, crunchy Caesar Brussels Sprouts make a perfect lunch or side dish. Coated in creamy Caesar dressing… just plain YUM!
Ingredients
- 2 Tbsp. olive oil
- 1 lb. Brussels sprouts, shaved
- salt & pepper to taste
- 1 Tbsp. red wine vinegar
- 1/2 cup creamy caesar dressing
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- Juice of 1/2 a lemon
- 1/2 tsp. dried oregano
- croutons for serving
Directions
In a large skillet over medium-high heat, heat olive oil. Add Brussels sprouts and season with salt and pepper. Cook stirring occasionally, until Brussels sprouts are tender, 5 minutes.
Stir in red wine vinegar and remove from heat. Transfer to a large serving bowl.
In a separate bowl, whisk together caesar dressing, Parmesan, garlic, lemon juice, and oregano. Drizzle some of the dressing over the Brussels sprouts and toss to combine.
Add more dressing as desired, and garnish with Parmesan and croutons.
