Chicken Pot Pie
A cozy, comforting, wholesome meal for the cold weather to come ft. Georgia carrots.
Ingredients
- 2 pack pie crust
- 1 cup sour cream
- 1 10 oz. can cream of chicken soup
- 1 onion, chopped
- 2 carrots, peeled and chopped
- salt & pepper to taste
- 1 cup frozen peas
- 2-3 chicken breasts
- 2 tsp. thyme
- 2 Tbsp. parsley
Directions
Preheat oven to 375. Place one pie crust in the bottom of your pie baking dish. Boil chicken breasts in a pot until fully cooked and tender, about 1 hour. Once chicken is cooked, shred and set aside.
In a large bowl, combine chicken, vegetables, sour cream, cream of chicken soup, and seasonings. Fold together until well combined. Spoon mixture into prepared pie crust.
Place the second pie crust over the top and crimp the edges of each crust together. Brush the top crust with egg wash and cut a small slit in the top. Bake for 30-40 minutes and enjoy!
