Chili Cheese Sweet Potato Casserole

Sweet potato toppings go beyond butter and cinnamon! Turn a potato into a whole meal with this chili cheese casserole.

Ingredients

  • 1 lb. ground beef
  • 1 can black beans
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup red bell pepper
  • 2 Tbsp. chili powder
  • 28 oz. can crushed tomatoes
  • 1 cup beef broth
  • 2 cups sweet potatoes, diced
  • 1 cup shredded Monterey Jack and cheddar cheese
  • salt and pepper
  • 1 tsp. cumin
  • 1 tsp. oregano

Directions

Preheat oven to 400. Heat your cast iron skillet over medium-high heat. Cook ground beef until fully browned. Drain grease and add onion, garlic, bell pepper, sweet potatoes, and spices. Cook stirring occasionally until vegetables are softened. Add tomatoes, black beans and beef broth and bring to a simmer.

Place skillet in the oven to bake for 35 to 40 minutes. Add cheese and broil until melted and bubbly. Add salt and pepper to taste. Enjoy!
