Cranberry-Orange Bread
This Cran-Orange Bread has all the flavors of the Holidays.
Ingredients
- 2 cups plus 2 Tbsp. all-purpose flour
- 1 cup sugar
- 1 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 3/4 cup whole buttermilk
- 3/4 cup canola oil
- 2 eggs
- 2 Tbsp. grated orange zest
- 3-4 Tbsp. fresh orange juice
- 1 1/2 cups frozen whole cranberries
- 1 1/2 cups powdered sugar
Directions
Preheat oven to 350 and coat the loaf pan with cooking spray.
Whisk together flour, sugar, baking powder, cinnamon, salt, and nutmeg. In a separate bowl, combine buttermilk, oil, eggs, and 1 tablespoon of orange zest.
Add flour mixture to wet ingredients and fold together until just combined. Gently stir in cranberries. Do not overmix. Pour batter into prepared loaf pan.
Bake for about an hour. Let bread cool in the pan on a wire rack for about 10 minutes. Remove loaf from pan and let cool completely.
Make the Glaze:
Whisk together powdered sugar, 3 tablespoons orange juice, and 1 tablespoon orange zest in a small bowl until smooth. Add more orange juice, 1 teaspoon at a time, to reach desired consistency. Pour glaze over cooled loaf. Enjoy!
