Deconstructed Beef Kebabs

Ingredients
- 1 1/2 pounds beef sirloin, cut into 1-inch cubes
- 1 red onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 4 oz mushrooms
- 1 large zucchini, sliced
Marinade:
- 3/4 cup soy sauce
- 1/2 cup oil
- 2 Tbsp. red wine vinegar
- 2 Tbsp. lemon juice
- 1 Tbsp. Dijon mustard
- 2 garlic cloves, minced
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1/2 tsp. pepper
Directions
Preheat oven to 400. In a large bowl, mix the marinade ingredients.
Add meat and vegetables to the marinade. Cover and marinate in the refrigerator for 1 to 6 hours. Add meat & vegetables to the baking sheet in a single layer. Discard marinade.
Bake 25-30 minutes at 400 degrees.
