French Onion Chicken Casserole

Dinner is served! This French Onion Chicken Casserole is a one-pan wonder bursting with flavor!

Ingredients

  • 3 Tbsp. olive oil
  • 5 cups Vidalia onions, sliced thin
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 2 Tbsp. unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 3 cups cooked chicken, chopped or shredded
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 Tbsp. chopped parsley
  • 1 cup crispy fried onions
  • 1/2 cup shredded cheese

Directions

Preheat oven to 350. Coat baking dish with cooking spray.

Heat oil in a skillet over medium heat. Add onions, cover, and cook 10 to 12 minutes until soft and starting to brown. Stir occasionally. Stir in salt and pepper and continue cooking for another 8 to 10 minutes. Add butter and garlic, let cook, and stir constantly until butter is melted. Stir in broth and bring to a simmer. Scrape the bottom of the pan to release stuck browned bits.

Mix chicken, sour cream, mayonnaise, and parsley in a separate bowl.

Add onion mixture to the chicken mixture and stir until combined. Pour mixture into baking dish and sprinkle with shredded cheese and fried onions.

Bake for 25-30 minutes until cheese is melted and sides begin to brown.
