Fresh Citrus & Cranberry Salad
Salads ft. fresh Georgia citrus! Add your favorite protein to make a delicious lunch.
Ingredients
- 2 cups frozen cranberries, thawed
- 4 oranges
- 2 stalks celery, sliced
- 1/3 cup red onion, finely chopped
- 1/4 cup sugar
- 2 Tbsp. fresh lemon juice
- 1 tsp. ginger
- 15 oz. package baby arugula
- 1/4 cup fresh mint, chopped
- 2 Tbsp. olive oil
Directions
Coarsely chop cranberries and add them to a bowl. Peel oranges and add to the bowl with cranberries. Stir in celery, onion, sugar, lemon juice, and ginger. Cover and refrigerate for at least one hour.
Toss arugula with mint and olive oil. Top with cranberry mixture and serve!
