Harvest Grain Bowl

Ingredients
- 1 cup wild rice
- 3 cups vegetable broth or water
- 1 Tbsp. butter
- salt to taste
- 4-6 cups kale or mixed green lettuce
- 1 lb. chicken, cooked and chopped
- 1 apple, sliced
- 1/2 cup pecans
- 4 oz. goat cheese, crumbled
Vinaigrette:
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 3 Tbsp. pure maple syrup
- salt to taste
Roasted Sweet Potatoes:
- 1 lb. sweet potatoes
- 2 Tbsp. oil
- 1/2 tsp. garlic powder
- 1/2 tsp. chili powder
- 1/2 tsp. paprika
- 1 tsp. salt
- 1/2 tsp. pepper
Directions
Bring broth/water to a boil. Add wild rice and cook according to package directions.
Preheat oven to 425. Add cubed sweet potatoes to a large bowl and drizzle with oil. Mix all spices and toss potatoes until they are coated evenly/ Bake 10 minutes, remove from oven and toss, then return to bake for another 15-20 minutes.
Meanwhile, mix the dressing together and place it in the refrigerator for flavors to meld.
To assemble the salad, add chopped kale or mixed green lettuce to your bowl. Top with wild rice, roasted potatoes, chicken, pecans, diced apples, and goat cheese crumbles. Drizzle with vinaigrette. Enjoy!
