Homemade Strawberry Shortcake
Spring and summer’s favorite classic dessert!
Ingredients
- 2 3/4 cups flour
- 1/4 cup sugar
- 4 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 3/4 cup butter, cubed
- 1 cup buttermilk
- 2 Tbsp. heavy cream
Berries & Whipped Cream
- 6-7 cups strawberries, quartered
- 1/4 cup sugar
- 1 tsp. vanilla extract
- 1 cup heavy cream
Directions
Start with your berries: Stir strawberries with 1/4 cup sugar. Cover and set aside in the fridge.
Make your biscuits: Preheat oven to 400. Mix flour, sugar, baking powder, baking soda, and salt in a large bowl. Whisk until combined. Add cubed butter and pulse in a food processor until coarse crumbs form.
Pour in buttermilk. Fold everything together until dough forms. On a floured workspace, with floured hands, flatten dough into 3/4 inch thick rectangle. Fold edges into the center, flatten, and repeat. Cut into biscuits.
Brush tops of biscuits with heavy cream and bake in cast iron skillet for 18-22 minutes.
Make whipped cream: Using a mixer, beat heavy cream 2 tablespoons sugar, and vanilla on medium-high speed until soft peaks form, about 3 minutes.
Slice biscuits in half and layer with strawberries and whipped cream. Serve and enjoy!
