Macaroni Salad

Crisp, refreshing macaroni salad is the perfect spring and summer side dish! It’s also a great way to sneak a few extra veggies into a picky kiddo’s diet!

Ingredients

  • 8 oz elbow macaroni
  • 1 1/4 cups mayonnaise
  • 1/4 cup milk
  • 1 Tbsp. apple cider vinegar
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 large carrot, chopped
  • 1/2 cup celery, chopped
  • 1 red bell pepper chopped
  • 1/4 cup onion, finely chopped

Directions

Cook your macaroni noodles according to package directions. Drain, rinse under cold water, and set aside.

Whisk together mayonnaise, milk, vinegar, sugar, salt, and pepper in a large bowl. Add the macaroni, carrot, celery, bell pepper, and onion. Gently stir the mixture until well combined.

Cover and refrigerate for at least 30 minutes. Gently stir before serving!
