Mashed Turnips with Bacon & Chive

Loaded mashed potatoes with a twist. These mashed turnips make a great cozy side dish.

Ingredients

  • 8 cups turnips, peeled and diced
  • 1/2 pound bacon
  • 2 Tbsp. bacon fat
  • 2 Tbsp. butter
  • 1/4 tsp. garlic powder
  • 1/8 tsp. onion powder
  • salt & pepper to taste
  • 2 Tbsp. chives, chopped

Directions

Place diced turnips in a large pot of water. Bring to a boil and let simmer uncovered until tender, 30 minutes.

While turnips are boiling, cook bacon in medium skillet until crispy. Reserve 2 tablespoons of bacon grease and crumble cooked bacon.

Drain turnips and add bacon fat, butter, garlic powder, onion powder, salt, and pepper to the pot. Mash to desired consistency and fold in bacon. Top with chopped chives and serve!
