Mirepoix

Onions are a shoo-in for most recipes, but have you ever heard of Mirepoix? Two parts onion to one part each carrot and celery, Mirepoix is a trio that adds deep flavor when cooked.

Ingredients:

  • 1 medium Vidalia onion
  • 1 large carrot
  • 2 stalks celery
  • 2 Tbsp. butter or olive oil

Directions:

Peel and remove the top of the onion. With the root end still attached, chop into 1/2 inch pieces.

Wash, peel, and trim the ends of the carrot. Chop into 1/2 inch pieces.

Wash and trim celery ends. Chop stalks into 1/2 pieces.

In a large skillet, melt butter (or olive oil) over medium heat, add vegetables once melted or heated through. Adjust heat down to medium-low and cook, stirring occasionally, until vegetables are soft, about 10 minutes.

Note: For soups and stocks, chopped veggies can be anywhere from 1 to 2 inches.
