Parmesan Kale Grilled Cheese
Anything sandwiched between two slices of sourdough bread and melty cheese is good, amiright?! Try this Parmesan Crusted Kale Grilled Cheese and thank us later!
Ingredients
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. brown sugar
- 1/4 tsp. crushed red pepper
- 2 Tbsp. grated Parmesan cheese
- 1 Tbsp. butter, softened
- 1 6 oz. bunch kale
- 1 Tbsp. olive oil
- 2 garlic cloves, minced
- salt & pepper
- 2 slices sourdough bread
- 3 oz. sliced swiss cheese
Directions
In a small bowl, whisk together vinegar, sugar, and red pepper flakes until sugar dissolves.
In a separate bowl, combine parmesan and butter. Strip kale leaves from stems, then tear or chop leaves into bite-sized pieces.
In a large skillet over medium heat, add olive oil, garlic and kale and cook until slightly wilted, about 2 minutes. Pour vinegar mixture over the kale and cook 4 to 6 minutes stirring frequently. Season with salt and pepper.
Transfer cooked kale to a bowl, wipe pan clean and build sandwich:
Spread one side of each slice of bread with softened butter. Add cheese to one unbuttered side, top with kale, remaining cheese, and other slice of bread buttered side out.
Heat skillet over medium heat and add sandwich. Cook until bread is golden and cheese is melty, about 2 to 4 minutes. Flip and cook 2 to 3 minutes more.
