Potlikker Soup
Try this great Southern classic – Potlikker Soup. With fresh collard greens, ham, field peas and crowder peas your family can enjoy this classic Southern soup.
One of the best things about this soup is being able to use in-season Georgia-grown vegetables.
- Collard greens are in season from October through June
- Both field peas and crowder peas are in season from mid-May through October
Be sure to check the COOL labels on your greens and peas to see where they are grown.
Ingredients:
- 2 lbs fresh collard greens
- 2 lbs ham, chopped
- 2 Tbsp. hot sauce
- 3 Tbsp. olive oil
- 3 medium onions, chopped
- 2-3 garlic cloves, minced
- 6 red potatoes, diced
- 3 14 oz cans chicken broth
- 2 16 oz cans field peas, drained
- 2 16 oz cans crowder peas, drained
- 2 cups water
- 1 Tbsp. white vinegar
- 1 tsp. salt
Directions:
Remove stems and spots from collards. Tear into 1-inch pieces. Bring collards and water to boil. Collards should be covered with water. Drain and repeat the process.
Toss ham in hot sauce. Cook ham in olive oil for 8 to 10 minutes. Brown diced ham with onion and garlic until tender. Stir in collards, potatoes and broth along with other ingredients.
Reduce to simmer for 45 minutes.
