Raspberry Spinach Salad with Raspberry Vinaigrette
Spice up lunchtime or be the “hostess with the mostest” with this Raspberry Spinach Salad with fresh Raspberry Vinaigrette Salad!
Ingredients:
Salad
- 8 oz fresh baby spinach
- 1/2 cup fresh, Georgia raspberries
- 1/2 cup fresh, Georgia blueberries
- 1/4 cup red onion, thinly sliced
- 1/3 cup crumbled feta cheese
Raspberry Vinaigrette Dressing
- 1/4 cup extra-virgin olive oil
- 2 tsp. apple cider vinager
- 1 Tbsp. fresh basil, chopped
- 2 tsp. honey
- 1/2 tsp. Dijon mustard
- 1 large garlic clove
- 1/2 cup fresh raspberries
- Kosher salt & black pepper
Directions:
Prepare vinaigrette by combining olive oil, apple cider vinegar, basil, honey, Dijon mustard, garlic, and fresh raspberries in a food processor. Season with salt and pepper to taste. Pulse until completely smooth.
To assemble the salad, put spinach in a large serving bowl and top with raspberries, blueberries, red onions, and feta. Drizzle with vinaigrette as desired and serve!
