Sausage & Kale Stuffed Shells

Ingredients

  • 6 oz jumbo shells
  • Salt & pepper to taste
  • 2 tsp. olive oil
  • 4 oz Italian sausage
  • 2 cups chopped kale
  • 1 1/2 cups ricotta cheese
  • 6 Tbsp. grated parmesan cheese
  • 3 cups marinara sauce

Directions

Cook shells in boiling water about 5 minutes.

Heat oil in a large skillet, add sausage, and cook 4 to 5 minutes. Transfer cooked sausage to a plate and set aside.

In the same skillet, add kale and 2 tablespoons water and cook about 2 minutes until soft and wilted. Season with salt and pepper and add sausage back to the pan. Let mixture cool completely then coarsely chop.

Combine ricotta, 1/4 cup parmesan, 1/2 cup mozzarella, and sausage mixture and season with more salt and pepper. Stuff each shell with about 2 tablespoons of filling. Spread marinara sauce in the bottom of a 9×13 baking dish. Place shells on top of sauce and sprinkle remaining cheese over top.

Cover and bake at 375 for about an hour then uncover and bake another 20 minutes until cheese is bubbly.
