Southern Style Collard Greens
And, don’t forget the cornbread!!!
Ingredients
- 12 slices hickory smoked bacon, chopped
- 2 onions, chopped
- 3/4 lb. smoked ham, diced or chopped
- cloves garlic, minced
- 3 32 oz. containers chicken broth
- 3 1 lb. packages collard greens, rinsed and trimmed
- 1/3 cup apple cider vinegar
- 1 Tbsp. sugar (optional)
- 1 tsp. salt
- 3/4 tsp. pepper
Directions
Cook bacon over medium heat in a large stock pot for 10 to 12 minutes until crisp. Add onion and saute about 8 minutes. Add garlic and ham to saute about 1 minute.
Stir in broth, collards, apple cider vinegar, sugar (if using), salt, and pepper. Reduce heat to medium-low and let simmer for 2 hours or until desired tenderness.
