Spinach Casserole
Bring this cheesy spinach casserole to the table, and it might just become a new family favorite!
Ingredients
- 1 cup fried onions, crushed
- 1/2 cup bread crumbs
- 2 bags fresh spinach
- 3 Tbsp. butter
- 3 cloves garlic, minced
- 3 Tbsp. flour
- 1 1/2 cups whole milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 oz. cream cheese
- 1 1/2 cups shredded gruyere cheese
- 1/3 grated parmesan cheese
Directions
Preheat the oven to 350. In a small bowl, combine 1/2 cup of fried onions and breadcrumbs; set aside.
Heat olive oil in a large skillet. Add spinach and cook until wilted, stirring occasionally. Transfer to a bowl and set aside. Melt butter in the same skillet and add garlic and flour, stirring constantly until smooth. Whisk in milk, salt, and pepper. Cook until the mixture thickens, about 5 to 7 minutes.
Reduce the heat to low and stir in the cream cheese until combined. Add the gruyere in 3 batches, making sure the cheese is completely incorporated. Stir in the parmesan. Add the spinach to the cheese sauce until combined. Add the remaining 1/2 cup of fried onions.
Transfer mixture to a square baking dish and sprinkle with fried onion and bread crumb mixture. Bake until casserole is golden and bubbling, 30 to 35 minutes.
