Squash Casserole

Ingredients:

  • 6 cups Georgia yellow squash, diced
  • Vegetable oil
  • 1 onion, chopped
  • 4 Tbsp. butter
  • 1/2 cup sour cream
  • 1 tsp. house seasoning
  • 1 cup cheddar cheese, grated
  • 1 cup crushed Ritz crackers

House Seasoning:

  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder

Mix ingredients together and store in airtight container

Directions:

Preheat oven to 350.

Saute squash with a bit of vegetable oil over medium heat until completely broken down, 15 to 20 minutes. Drain excess moisture from the squash and set aside.

Saute onion and butter together, about 5 minutes. Remove from the pan and mix all ingredients together except bread crumbs. Pour mixture into a buttered casserole dish and top with crushed Ritz crackers. Bake for 25-30 minutes.
