Stewed Okra & Tomatoes

Cook up some nostalgia this week and make this classic Stewed Okra and Tomatoes recipe!
Ingredients
- 1 lb. fresh okra
- 1 medium onion, sliced
- 1 28 oz can diced tomatoes
- 1 tsp. salt
- 1/2 tsp. pepper
- water
Directions
Cut the okra into round slices, discarding the stems. Cut onion into thin slices.
Add tomatoes, okra, and onion to a pot. Add a bit of water to the bottom of the pot and bring to a boil. Season with salt and pepper, reduce heat and let simmer until okra is tender.
Serve as a side dish or as a main course over rice. Enjoy!
