Texas Caviar
This Texas Caviar is bursting with fresh summer flavor, perfect to enjoy by the pool or a fresh, wholesome lunch.
Ingredients
- 2 cans black-eyed peas, drained and rinsed
- 1 can chickpeas, drained and rinsed
- 1/2 cup diced tomatoes
- 1/4 cup diced red pepper
- 1/4 cup diced red onion
- 2 Tbsp. lime juice
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1/2 tsp. pepper
Directions
In a large bowl, combine black-eyed peas, chickpeas, tomato, red pepper, onion, lime juice, oil, salt, and pepper.
Cover and refrigerate for at least 1 hour. Add diced avocado and chopped cilantro before serving if desired.
